Smoked Salmon:

Easy Smoked Salmon Recipe:

Equipment:

Smoker (see Smoking) , Bowl, Plastic Wrap, Thermometer(optional)

Ingredients:

Brown Sugar, Salt

Instructions:

Note: It may be difficult to cold smoke salmon in warmer months. The max temperature inside the smoker should not exceed 100F.

1. Purchase previously frozen atlantic salmon from the local supermarket or grocery store. Avoid sockeye and other types of salmon that have bones that are difficult to remove.

2. Gather ingredients, salt and brown sugar are all that is needed.

3. Pour Brown Sugar into bowl and form into 1/2 of the bowl.

4. Fill other half of bowl with salt so that volume is 50%/ 50%.

5. Mix Brown Sugar + Salt mixture with spoon.

6. Place plastic wrap on surface that is 4x wider than salmon fillet. Spread brown sugar + salt mixture thoroughly (1/8"[3mm]) over top, bottom, and sides of salmon fillet.

7. Pull plastic wrap around 3 sides of fillet leaving one side open for water to drain as it cures.

8. Place wrapped fillet into bowl at an angle with open side down. Place into refrigerator for 12 hours and let cure. Fluid will drain through open end of plastic wrap.

9. After 12 hours, remove from plastic wrap and brush off any remaining salt or brown sugar. Let soak in bowl of water for 5 minutes.

10. Let salmon rest in refrigerator for 2-4 hours to develop tacky layer on surface. The tacky surface helps the smoke cling to the salmon.

11. Fill water bowl with ice to keep smoking chamber cool. If smoking in the fall or winter, ice may not be needed.

12. Start small fire using Alder, Apple, or Cherry wood with the Hybrid Cabin-Pyramid Method (see Campfire).

13. When the fire has lit and is developing smoke, close smoker. Make sure temperature inside closed smoker does not exceed 100F

14. Smoke the salmon fillet(s) in the smoker for 2-3 hours. Let salmon sit in refrigerator overnight inside plastic container. in the morning, enjoy fresh smoked salmon on a bagel or make smoked salmon dip.
